Roasted macadamia nut and salted caramel ice cream


Oh my goodness, this guiltless treat just sounds naughty and a good idea for a friday night snuggling up on the couch with your loved one.



  • 1 frozen banana
  • 100g chobani yogurt (or any, I used this one as it’s low in fat)
  • 2 tbs rice malt syrup
  • 1 tbs cacao spread
  • 2 tbs almond milk (or whatever milk you want)
  • 1 tbs vanilla
  • 2 tbs macadamia nuts
  • 1/2 tsp sea salt


Pre-heat oven to 200 degrees and crush up macadamia nuts, place them on a tray and into the oven till golden brown and allow to cool.

Place all ingredients excluding 1 tbs rice malt syrup and cacao spread, into a food processor and mix until smooth. Pour into a freezer safe container, add the remainder of the rice malt, cacao spread and roasted macadamia nuts and swirl through. Freeze for a couple of hours and serve with extra crushed macadamia nuts.
