Settling is easy, fighting is not!

Dedicate yourself to a goal and fight for it, fight to the end! Don’t settle. Don’t give in. When the going gets tough you get tougher and show the world who is boss. You mean business and you ain’t going anywhere until you have finished what you started … then start the process again with a new goal!

My oh my this recipe is super easy and turned out great and i think it is going to be a great base recipe.

Banana-and-blueberry-cake

Ingredients:

4 bananas (mine were rather small, so two medium to large banana’s would be fine!)

1 egg

1/2 cup coconut oil

1 tsp vanilla

1 tsp baking powder

1 tsp baking soda (bi-carb)

1 cup self raising flour

1/2 cup flax almond meal (or use 1/2 cup more of self raising flour)

1 cup frozen blueberries

 

Method:

Pre heat the oven to 180 degrees and prep your cake dish

Mash the bananas and add all the wet ingredients in first (no blueberries) and combine

Add the dry ingredients, make sure to sift your flour. Add the blueberries in with the flour so that the flour will coat it and they will mix all through your cake rather sink to the bottom. Mix till combined

Spoon into cake tin

Cook for about 30 minutes or until fully cooked through.
