I got to say this, I love that photo I took of these cookies, simply stunning, if you ask me. Now that I have got that off my chest, let’s talk about Chickpeas!
So what are some of the health benefits of chickpeas?
Chickpeas are a great source of plant based protein, mix them with grains or vegetables and they become a complete protein. This means they contain all of the building blocks of protein called the essential amino acids. They are rich in both soluble and insoluble dietary fiber making them an excellent source for those who are looking to lose weight. Chickpeas can also help lower your LDL (bad cholesterol) and total cholesterol if eaten regularly enough.
1 can chickpeas, drained and washed
1 tsp vanilla
1 tsp baking powder
1/4 cup coconut oil
1/2 cup of Flax Almond Meal
Extra – dates to put on top, if you want. Or you can add chocolate chips/ cacao nibs instead when you add the flax and almond meal.
Preheat oven to 180 degrees
Place all ingredients except the flax and almond meal into a food processor and combine.
Add flax and almond meal and pulse until combined
Spoon mixture into cookies (i was able to make 13 cookies)
Press a date gently down on top of each cookie mixture
Cook for about 8-10 minutes or until lightly brown
