Hey Fit Family,
I have another episode of Healthy Mum Healthy Child, today Mia and I are cooking up Pea and Corn Fritters. This recipe is not only great finger food for children but also great for adults as well, it’s super easy you could practically throw in whatever vegetables you want, it’s quick, it’s healthy plus you can make up a big batch and freeze them to have later on in the week.
Once again it looks like she doesn’t like them however she did eat the mixture throughout as we were making them and I have given them to her again and she ate them – you will have to take my word on that. For video purposes though she provides a good show trying to prove that children really don’t like eating vegetables and I just look like a fool haha!

Recipe – Pea and Corn Fritters
1 largish carrot
1 can of Peas and corn
1/2 cup cheese
1/2 cup milk
1/2 cup plain flour (I just grabbed the self raising and didn’t check, it still came out perfectly fine!)
Any herbs and spices
Coconut oil to cook the fritters
Heat fry pan up with a little coconut oil
Mix all the dry ingredients together
Add the wet ingredients
Scoop out the mixture into sizes you want (i made mine a little bigger than a tablespoon – these were made more for Mia rather than myself which made 22)
Cook for about a couple of minutes or until it starts to brown on the bottom and looks cook then flip and cook for another minute or so.
