Firstly, let’s begin with Healthy Mum Healthy Child – What is it?
Healthy Mum Healthy Child is a series where I am teaching my daughter all about real food and eating healthy and getting into the kitchen to make a mess and cook up healthy recipes! She loves helping me cook, I give her little jobs like helping put all the ingredients onto the counter. I try and highlight/use one vegetable (in particular) in the recipe, I love getting her in on the cooking part because firstly she is helping make the food that she will eat, secondly she is touching, seeing, even tasting the vegetable as we make it.
I don’t like the thought of hiding vegetables within food so that she is eating more vegetables without her knowing, I want her to see that she is actually still eating them just in another way. For example if I was to put avocado down on her plate she would try it, spit it out and pass it to me however we made muffins at the start of the week and we put avocado in them and she is happy to eat them and so is my husband bonus!
Here for you today I have a Pumpkin Muffin Recipe – Mia was eating these for breakfast for the week with a side of fruit.
1 cup cooked pumpkin
2 cups rolled oats
Vanilla, all spice, nutmeg, cardamon – a dash
2-3 tbs coconut oil
1 tbs PB2 or almond butter
1 tsp baking powder
1 tsp bicarb
Preheat oven to 180 degrees
Place oats into food processor and process until fine.
Add the remaining ingredients and process until smooth
Prepare muffin tin, add mixture into the holders
Cook for about 20 minutes or until you can smell a lovely pumpkin aroma throughout the house or when poked and it comes out clean.
