Ok that should do it, now time to make something that I can freeze and is healthy (for my little girl).
Ok originally I made this is in muffin form (photo) portioned controlled and easy for me to grab one, defrost and give her one. But I think it would look awesome in loaf form, cut a slice and top with mashed banana and ricotta cheese sprinkled with some cinnamon – yum!!!
1 1/2 cup rolled oats
1/2 cup whole meal flour
1tsp baking powder
1 cup milk (your choice)
10 dates chopped
Optional – 1 banana this will thicken the mixture so you may need to add a little extra liquid.
Preheat oven at 180 degrees
Place all ingredients except dates into food processor and blend till all ingredients are smooth, mix through dates.
Place mixture into a loaf pan and cook for 30 minutes or until cooked through.
Let cool for 10 minutes, cut a slice and serve with mashed banana and ricotta cheese, sprinkled with cinnamon.
