Sunday Protein Pancakes

  
Sunday mornings are for early bike rides followed with pancakes, not the sugar filled ones either but the nutritious and yummy ones that bring no guilt only enjoyment! 

Ingredients:

– rolled oats – 50grams 

– protein powder 10 grams

– fibre mix 10 grams 

– flaxseed meal 10 grams 

– egg 1

– baking powder, pinch 

– blueberries 70 grams

– water 2-3 tablespoons 

– coconut oil 5 grams 
Method:

Prepare fry pan with a little coconut oil on a medium heat 

Place all ingredients (excluding the blueberries) into a bowl and blitz with a hand blender until the mixture is smooth. 

Spoon mixture out of the bowl and place into the fry pan into pancakes. Flip over when bubbles start to occur and cook for about a minute longer.-

Once the pancakes are all cooked, place the blueberries on top and enjoy👌🏻👌🏻👌🏻👌🏻
