Sauteed kale filled omelette

Hey fit family,

Not sure if you are aware kale is a nutritional powerhouse and if you haven’t been eating it yet you are missing out. I made this kale filling for my omelette this morning for brunch and it tasted amazing!!!!! 


1 whole egg
2 egg whites
1 serve kale
4 cherry tomatoes
1 medium mushroom
Cayenne pepper
Black pepper.

1. Chop up the kale  and mushrooms and pre heat a fry pan with a little oil.
2. When the fry pan hotm sauteed the vegetables along with the tomatoes until the kale is wilted and the mushrooms are brown. Sprinkle the spices over the top and mix through. While that is cooking whisk the egg and egg whites together.
3. Take the kale filljng out and place on a plate. Pour the egg mixture into the fry pan and cook to your liking. Place the kale mixture to one  side of your omelette and fold the other side over the top like the photo.
