I created this muffin with my toddler in mind but hey that didn’t stop me from having one or two 🙂 They are super yummy and very healthy, It’s very important to me to make sure that I am feeding her little growing body with nutritious foods to get the best start in life. So she has one muffin with some Greek yogurt on the side for breakfast and she loves it!
- 2 cups rolled oats
- 1 cup of milk (I used full cream as these were made for her, however use whatever milk you want)
- 1 pear (chopped)
- 1 largish banana
- 5 dates (chopped roughly)
- 2 eggs
- 1 tbs vanilla essence
- 1 tsp baking powder
- dash of cinnamon
Preheat oven at 180 degrees. Place all ingredients into a food processor and mix thoroughly. Divided mixture into muffin pan and cook for approximately 20 minutes or poke a stick into one and if it comes out clean it is cooked.
Don’t overcook otherwise they will turn out hard and gross – I have learnt this with using oats. You do need a little more moisture when cooking with oats.
