A healthier alternative to a burrito or wrap if you are trying to cut out bread and wheat is lettuce cups. Super yummy and so easy to make you can add whatever salads, protein, vegetables you want. If you want you can cut up all the different salad toppings put it in the middle of the table everyone can then make there own creations 🙂
Spicy Chicken lettuce cups
Ingredients: Iceberg lettuce leaves, spinach, a small tomato diced, 1 medium mushroom, 1/4 avocado, 1 tsp jalapeno, spring onion, chives, chicken (diced), 1 tsp cayenne pepper (extra hot), 1-2 garlic pieces, 1 tsp ginger, 1 tsp paprika, coconut oil
(it all depends on how many you are making you will need more if you are feeding a family)
In a hot frypan put cayenne pepper, ginger, garlic, jalapeno, and paprika and some coconut oil and mix together. (If you want to cook your mushroom you can)
Cook the chicken in the spices.
While the chicken is cooking cut up all the salad.
(peel the iceberg lettuce leaves, i found it easier to go from the base and wash each one separately try and not tear them)
Once the chicken is cooked place the salad in the lettuce leave and chicken on top
